South Jersey BBQ Sauce (by way of Sydney, Australia)

This is a take on my beloved grandmothers' recipe which I have altered slightly. I just used it on some pulled pork I did in the smoker, and it was loved by all who tried.

4-5 cups of tomato sauce/ketchup
1 cup of apple cider vinegar
1/2 cup of packed brown sugar
2-3 tablespoons of molasses
1/2 finely diced onion
1/4 finely diced green pepper
2-3 cloves of minced garlic
1 tablespoon of yellow mustard
1 tablespoon worcestershire sauce
2 red hot chili peppers - finely chopped
1 inch of finely chopped fresh ginger (Optional but really works well with pork - I like it with or without)

Sweat the onions, green pepper and garlic (and ginger if using) for a minute, add chili peppers.
Add ketchup and rest of ingredients over low heat, simmer for 15-20 minutes - stirring regularly. It will burn if ignored!

I just tried Tim's Pulled Pork with BBQ sauce and I must say its the best BBQ sauce I've ever tasted and the smoked pork was tops! Thanks Tim!

Was great on the pork and chicken... and hamburgers and frankfurters! Gets really caramelized (why you have to watch it so it doesn't burn) which we love!
