Get ready with: 3-4 medium sized green tomatoes 1-2 eggs 1 cup corn meal 1/2 cup flour vegetable oil for frying
Slice tomatoes to a medium thickness. In a small bowl, beat eggs. Dip tomatoes into egg mixture then dip them into dry flour and meal mixture. Heat oil to approximately 350 degrees F. Add tomatoes to hot oil. Cook approx 3-4 minutes on each side, until golden brown. Drain on paper towels and salt to taste. Enjoy! My family really enjoys this dish, especially when it is hot off the stove.
